We do not do a sit down service and we would talk you out of one. The truck works best parked where people can see it, open from the moment the speeches finish, with guests wandering over when they are hungry rather than all at once because a toastmaster said so.
Everything is made on site that morning. The salsas, the pickles, the guacamole. The al pastor goes on the trompo and gets carved to order in front of whoever is standing there. It is the only bit of theatre we do and we do not have to try very hard with it.
